If vacuum and ascorbic acid prevent browning then it’s due to oxidation. If that doesn’t work there are other options.
I think it can be stored by giving O3 (ozone- passing ozone gas through coconut water) treatment to coconut water.
Here in Brazil, industrialized coconuts waters are preserved with ascorbic acid.
