Why Are Onions Harvested at Night? Onions are highly susceptible to sunburn. As a result of that and to improve worker harvesting conditions, onions are harvested at night. The hand harvest starts in the late afternoon and goes until around midnight.

The hand harvest starts in the late afternoon and goes until around midnight. The machine harvest starts around midnight and goes as late as noon the following day.
